Pulled Pork

3 tbsp salt
4 teaspoons sugar
2 tbsp paprika, smoked or unsmoked
1 tbsp fennell
1 tbsp cumin
1tbsp mustard
1 tsp garlic (2-3 cloves)
1 tsp black pepper
4-5 kg pork neck (20/25Euro)
Take pork out of fridge (Do the rubbing in advance if there is time, and leave to marinade)
Turn oven to 200
Mix all the above ingredients in a pestle & mortar
Rub over both sides of the pork
Leave to sit while the oven heats
When the oven is at 200, put the pork in.  Cook for 30 mins, turning once.
Remove and turn down the oven to 125
Cover the pork and cook for 2.5 – 4 hours or until tender and pullable.
Remove paper towards the end if a crispier finish is wanted.
Pull with hands or a fork, removing any very fatty bits.
Chill, and re-heat as required.
Serves 20 – 30.
